Spring always feels like a bit of a reset in our home. The days get a little longer, the food feels a little lighter, and suddenly I’m less interested in heavy, complicated dinners and more focused on quick, simple meals that I can actually get on the table in 15–30 minutes.
As a busy mum, weeknights aren’t the time for overthinking food. I need meals that are easy, mild enough for my toddler, dairy-free friendly (lactose intolerance life), and still feel like something I actually want to eat too.
Recently, I’ve been leaning heavily into simple Thai-inspired noodle dishes alongside basic spring staples like salads, soups, and sandwiches. Nothing overly spicy, nothing complicated — just flavourful, comforting food that works for everyone.
Here are some of my go-to easy spring weeknight meals.
🍜 Easy Thai-Inspired Noodle Dishes
These are my current weeknight favourites. They’re quick, flexible, and easy to adjust depending on what’s in the fridge.

Chicken & Veg Stir-Fry Noodles
A classic, simple dinner that never fails.
- Chicken breast (sliced thin)
- Broccoli
- Peppers
- Carrots
- Garlic
- Soy sauce
- Honey (optional, for balance)
- Rice noodles or egg noodles
Everything cooks quickly in one pan, and it’s mild enough for my toddler to enjoy as-is. If I want extra flavour, I just add chilli oil to my own portion after serving.

Beef & Mushroom Garlic Noodles
This one feels comforting but still light enough for spring.
- Thin sliced beef
- Mushrooms
- Spinach
- Garlic
- Soy sauce
- Sesame oil (optional)
- Noodles of choice
It’s a quick stir-fry situation — beef cooks fast, mushrooms add depth, and spinach wilts right at the end. Simple, filling, and very low effort.

Fresh, light, and perfect for warmer evenings.

- Ginger (optional, if you want extra warmth)
This is one of the quickest meals I make. Everything comes together in under 20 minutes, and the flavour stays gentle and savoury without being overpowering.

A very mild, comforting Thai-inspired option.

- Light coconut milk
- Mild curry paste (optional and very small amount)
- Noodles
This is a slightly creamier option without any dairy. It’s soft, comforting, and toddler-friendly because the flavour stays very gentle.
🥗 Easy Spring Salad Bowls
When I want something lighter, I go for simple bowls that take almost no time at all.

Quick Chicken Salad Bowl
- Cooked chicken strips
- Spinach
- Cucumber
- Peppers
- Olive oil + lemon-free dressing alternative (olive oil + a touch of honey + soy works surprisingly well)
This is a great “use what you have” meal and works well for lunch or dinner.
🥪 Simple Sandwich Nights
Not every meal needs to be cooked from scratch.

These are toddler-friendly, quick, and honestly a lifesaver on busy evenings when I just don’t want to cook.

This is my “clean out the fridge” meal. It’s light, warm, and easy to adjust depending on what’s left in the fridge at the end of the week.
👶 Toddler-Friendly Meal Tips
Cooking for a toddler while still wanting flavour for yourself is always a balancing act. Here’s what works in our house:
- Keep the base completely mild
- Add spice or heat separately for adults
- Cut noodles into smaller pieces
- Stick to soft, familiar textures
- Repeat ingredients often so meals feel predictable and safe
Most of these meals are naturally adaptable, which makes weeknights much easier.
🌿 Final Thoughts
Spring cooking doesn’t need to be complicated. For me, it’s about keeping things simple, quick, and realistic for the stage of life I’m in right now.
If it takes longer than 30 minutes or requires too many steps, it’s probably not making it onto my weeknight menu.
These meals have been keeping things simple in our house lately — and honestly, that’s exactly what I need right now.
