There’s something special about a good bowl of soup — it’s simple, nourishing, and somehow always arrives just when you need it most. Whether it’s one of those long days when you’re running on coffee and cuddles, or the weather suddenly turns crisp and grey, a warm soup feels like a hug in a bowl.
As a busy mum, I’ve learned that comfort doesn’t have to mean complicated — and maybe that’s something I picked up from my own mum.

🧅 French Onion Soup
This classic never fails me. The smell of onions slowly caramelizing in butter is pure magic — golden, sweet, and rich. Top it with gooey melted Swiss cheese and a crispy slice of baguette, and you’ve got the kind of comfort that feels earned after a long day.
Ingredients

2 tablespoons unsalted butter

2 large yellow onions, halved and thinly sliced

½ teaspoon salt

½ teaspoon brown sugar
-
4 cups beef broth
-
2 tablespoons white wine
-
2 teaspoons Worcestershire sauce
-
½ teaspoon dried thyme leaves
-
1 bay leaf
-
2 teaspoons balsamic vinegar
-
Salt and black pepper, to taste

¼ cup shredded parmesan, divided

2 baguette slices, toasted
-
4 slices Swiss cheese
Instructions

Melt butter in a large pot over medium heat.

Add onions, salt, and brown sugar. Cook for about 35 minutes, stirring often, until the onions are deeply caramelized — they should be soft, golden, and sweet-smelling.

Add beef broth, white wine, Worcestershire sauce, thyme, and the bay leaf. Simmer for 20 minutes, stirring occasionally.

Remove the bay leaf, then stir in balsamic vinegar. Season with salt and pepper.

Pour the soup into oven-safe bowls and place them on a baking sheet.

Top each with parmesan, toasted baguette, and Swiss cheese.

Broil until bubbly and golden on top.

Mum Tip: Make the caramelized onions in advance — they’ll keep in the fridge for a few days and make weeknight prep so much easier. I love serving this with a light salad or a small glass of red wine once my little one’s asleep.

🌽 Southwestern Corn Chowder
This chowder is comfort in its creamiest form — thick, hearty, and full of flavour with just a hint of spice. It’s the perfect one-pot meal for chilly evenings, or for when you want something warm without fuss.
Ingredients (Serves 2)

1 tablespoon butter

1 scallion, white and green parts separated, thinly sliced

1 medium carrot, halved lengthwise and thinly sliced

½ teaspoon chili powder
-
½ teaspoon dried oregano
-
Coarse salt and ground pepper

1 baking potato, peeled and cut into ½-inch pieces
-
1 can (398ml) creamed corn
-
1 can (14.5 oz) reduced-sodium chicken broth
-
1 cup milk
Directions

In a medium saucepan, melt butter over medium heat. Add the white part of the scallion, carrot, chili powder, and oregano. Season lightly with salt and pepper. Cook for about 2 minutes, until fragrant and softened.

Add potato, corn, broth, and milk. Bring to a boil, then reduce to a gentle simmer. Cook for 15–20 minutes, or until the potatoes are tender and easily pierced with a knife.

Stir in the green part of the scallion, taste, and adjust seasoning as needed.

Serve warm and enjoy that creamy, subtly spicy goodness.
Mum Tip: This soup is brilliant for meal prep — double the batch and store leftovers for the next day. It even freezes well (just add the milk when reheating). I love pairing it with crusty bread or cornbread for dipping — and if you’re feeling fancy, a sprinkle of shredded cheddar on top takes it to the next level!
💛 Seasonal Comfort for Busy Days
There’s something about soup that marks the change of seasons — the way it makes even cold, grey days feel softer. I love making a pot when I’ve got the sniffles, or when the air smells like autumn. The warmth from the stove, the steam rising, and that first comforting spoonful — it’s those little things that make motherhood feel balanced again.
Both of these soups remind me to slow down — to breathe between the chaos and remember that comfort doesn’t always come from grand gestures. Sometimes, it’s just a spoon, a quiet kitchen, and a bowl of something homemade.
